Sweet Potato Thyme Mash, Garlic Asparagus and Lemon Chilli Salmon.

When I think about mash it’s not really something that elated my taste buds. I find it a little dull and boring, to be honest, so as well as thinking of ways to spice it up. I came across this Sweet Potato mash recipe with Thyme, which gives off and amazing aroma. I did, however, add and change a few things, such as just using low-fat ingredients and adding coconut milk. The salmon had to give off a kick but I didn’t want it to give off an overpowering taste. So I kept it simple. As for the Asparagus, it’s just a classic and goes hand in with salmon.

35 minutes is all you’ll need. That does however not include prep time which takes 10min. I highly recommend the Sweet Potato mash, it gives Mash Potatoes hope for those who aren’t a fan.

Ingredients

 Couple Salmon Fillets

6, Sweet Potatoes

3, White Potatoes

Handful of Asparagus

2, Garlic Cloves

1/2, tbsp Garlic Powder

1, tbsp Thyme

Chilli Flakes

Olive oil

 Butter

100ml, Light Double cream

100ml, Coconut Milk

100ml, Semi Skimmed Milk

Salt and Pepper

Method
  1. Boil the water and add some salt in your choice of pot. Once it has come to a boiling point, throw in the White Potatoes and cover for 5 min. After that has passed, throw in the Sweet Potatoes for another 15min and turn the heat down a little. (While that is boiling, wash the Salmon and place it on a tray or plate drizzle a little olive oil over the Salmon. Add the Lemon, Chilli Flakes along with some Salt and Pepper. Massage it all in the fish and put to the side).
  2. Drain the potatoes once they are done, then place them back into the empty pot. Add the Milk, Butter, Coconut Milk and Double Cream. Add separately while either mashing them with a Wisk, food processor or hand blender. Once you have poured and blended all that in, throw in the Thyme, Salt and Pepper. Give it a couple more blends/whisks and leave to the side.
  3. Heat up two frying pans, once hot add Olive Oil to one and Butter the other. Then place the Salmon Fillets skin side down first and leave for 4min, reduce the heat.
  4. While that is cooking add the Garlic Cloves to the other pan and leave for 1 – 2 min. Reduce the heat to a medium level and throw in the Asparagus stir occasionally and sprinkle some Garlic Powder over the pan and stir occasionally for about 4 min. (You can always add a little more Garlic powder if that’s your thing)  
  5. Once the time has passed gently flip it over with a spatula, roughly for the same amount of time.
  6. Serve the mash with the Salmon and Asparagus situated on top. Or however, you see fit.
